In celebration of summer, here's one of my favorite recipes.

I try to eat what's in season and these days, it's a little easier on the pocketbook to pick up fresh vegetables at farm stands. An easy, yet nutritious summertime meal is grilled veggies and fish.

You can use any fish that you like, although I recommend Salmon due to the Omega 3 oils that are so plentiful in the Salmon. Omega 3s are anti-inflammatory, essential fats that our bodies need for good health. Omega-3s offer protection against heart attack, stroke, cancer, and inflammatory diseases such as rheumatoid arthritis. Salmon also has far less saturated fat than meat or poultry. Here's my special grilling blend:

 

¼ cup Soy Sauce

½ cup Toasted Sesame Oil

2 TBSP crushed garlic (yum)

4 cups fresh vegetables

(I use a mixture of yellow, green squashes, mushrooms, onions, plumb tomatoes, green beans,

Cauliflower, turnip, carrots or whatever is fresh)

 

Mix up the marinade and baste the veggies, then put them in a roasting pan covered with foil on the grill on high for 10 minutes. Stir and move to the top rack or side of the grill. Then, baste the salmon and cook for 10 - 15 minutes on med high with skin side up. 

 

Enjoy with your favorite summer beverage.
